Coconut and Peanut Butter Chicken Satay

Ah, chicken satay with coconut milk and peanut butter sauce… this one of my family’s favorites. Everybody loves them at home. It’s also great for entertaining. The sauce is completely delicious. Your friends will be satisfied. It is simple to make vegetarian — serve the sauce with grilled veggies and rice, or swap out the chicken skewers for grilled veggies or tofu grilled on a skewer.
The idea is to bring some far away sparkle into the home. Those tastes become friendly and we get totally used to making them on our own.

 

For the chicken marinade
1/2 cup soy sauce
1/2 cup lemon juice
6 garlic cloves minced
1 tablespoon peanut butter
1 tablespoon brown sugar

 

For the chicken, I usually make about 6 to 8 chicken breasts, and cut them into strips with kitchen scissors. I marinate them for about an hour in the refrigerator before I grill them, but you could marinate them overnight for a more intense flavor. Tip: Soak the bamboo skewers for about 20 minutes in a bowl of cold water to keep them from burning while you are grilling.
 

For the peanut sauce
1 1/2 cups coconut milk
1 cup peanut butter
1/ 4 cup lemon juice, freshly squeezed
2 tablespoons soy sauce
2 tablespoons brown sugar
1 teaspoon fresh grated ginger
6 garlic cloves, minced

 

Add the ingredients to a saucepan and cook over medium low, stirring constantly until the sauce is thick and creamy.
I serve these skewers with jasmine rice and top them with slices of freshly roasted coconut and a salad made with mango, cucumber, red pepper, scallions, cilantro, and toasted peanuts.

  15. I have tried something similar for the marinade and it does give chicken an awesome flavor. However, what really stands out is the unique sauce you have put together-very impressive. This recipe is a keeper!
