It’s totally aromatic, the fragrant jasmine rice combined with the lemon and cilantro. I love it with skewered chicken or steamed fish. A refreshing flavor ready to go with almost anything.
1 cup of Jasmine rice
1/2 cup of fine shredded unsweetened coconut
1/2 cup of finely chopped cilantro
1/2 cup of lemon juice
1 tablespoon of olive oil
zest of 1 lemon
sea salt to taste
Rinse the rice in a sieve with cold water until the water runs clear. In a saucepan over high heat add the water and rice, stir in the salt and olive oil. Bring to a boil then reduce heat to medium low. When most of the water has been absorbed reduce heat to low and without stirring add the lemon juice, shredded coconut, lemon zest, and chopped cilantro. Cover with a lid and cook for about 18 minutes. Fluff with a fork before serving.
