Salmon Pastry Filo Boxes Served With Tomato Jam

INGREDIENTS

  • olive oil
  • 1 teaspoon minced ginger
  • 1 clove of garlic, crushed
  • 2 teaspoons of vinegar cider
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon brown sugar
  • 400 gr. plum tomatoes or canned tomatoes
  • 4 salmon fillets
  • filo pastry
  • salt and pepper

Add a tablespoon of olive oil to a pan, saute the ginger and garlic. Add spices, vinegar, sugar and tomatoes. Cook until reduced and thick. Cut in half the salmon fillet and season. Brush two sheets of filo lightly with olive oil, layer on top of each other. Place the salmon in the center wrapped as a package. Place in a baking dish with the opening seam face down. Bake about twenty minutes until golden.
